On June 15th, 2026, the Eagles Wing team in Minnesota had the opportunity to participate in a valuable Nutrition and Meal Planning In-Service led by Polk County Nursing. This training brought together staff from across the region to explore practical strategies for supporting healthy eating habits, improving meal planning, and enhancing nutritional outcomes for the individuals we serve.
The session focused on creative approaches to meeting the needs of picky eaters, emphasizing the importance of offering a variety of protein sources, incorporating colorful and appealing meal presentations, and celebrating small successes in encouraging healthy food choices. Participants learned how simple changes in meal preparation and presentation can make a meaningful difference in nutritional intake.
A key theme throughout the training was the importance of keeping meal planning simple and sustainable. Polk County Nursing shared resources and ideas for using basic, nutritious ingredients and easy-to-follow recipes that staff with various levels of cooking experience can successfully prepare. Discussions highlighted the value of incorporating WIC-approved foods, using practical kitchen tools such as air fryers, and creating menus that are both nutritious and manageable for residential settings.
The training also explored the connection between nutrition and overall well-being. Participants discussed how reducing processed foods and increasing fresh food options can positively impact health, behavior, and quality of life. Staff shared experiences demonstrating how thoughtful menu planning can support both physical and emotional wellness for the individuals they support.
Another important focus was encouraging client involvement in meal preparation. By engaging individuals in cooking, serving, and meal-related tasks, providers can promote independence, build confidence, and increase interest in healthy eating.
Eagle Wing and Redwood extend their sincere appreciation to Polk County Nursing and Amanda Dingeldein for sharing their expertise, resources, and practical guidance. This partnership provided valuable tools and ideas that staff can immediately apply in their homes and programs, helping ensure that the individuals we serve receive nutritious meals while fostering greater independence and well-being.
Collaborations like this strengthen our ability to provide person-centered support and demonstrate the power of community partnerships in enhancing services across our region.
